Sundays mean pancakes and a cup of freshly brewed coffee. Especially around this time of year where all I seem to be doing is burying my head in books and marching to class and back. I deserve a treat! Over the past couple of months, I have been shying away from packaged goods. I much rather prefer knowing exactly what is in my food! If I am being completely honest here, I LOVE cooking. I just love experimenting with different recipes and trying out different things in the kitchen. That is why Sunday mornings I dedicate special time in the morning to make a good, delicious, clean-ish breakfast and sip on my coffee before working the day away.
Recipe Serving (1-2)
- 3/4 Cup Oat Flour
- 1 Cup almond milk or nut milk of choice
- 1 Egg
- 1 Tbsp Coconut oil and additional to grease pan
- 1 Tsp Vanilla extract
- 1 mashed ripe banana
- 3/4 Cup blueberry
- Blueberry Jam and Blueberries to garnish
Combine all the ingredients together and pour thick batter into the heated greased pan and flip away! Don’t forget to add your garnish of choice, I like to have either pure honey or Blueberry Jam and blueberries.
